French Onion Stuffed Chicken Breasts

Ingredients

  • 2 tablespoons unsalted butter
  • 4 tablespoons extra virgin olive oil, divided
  • 4 large white onions, halved and thinly sliced
  • 1 teaspoon sugar
  • 2 teaspoons fresh thyme
  • 1 tablespoon balsamic vinegar
  • 1 cup beef broth, divided
  • 3 cloves garlic, minced
  • 4 boneless skinless chicken breasts
  • 1 1/2 cups gruyere cheese, grated
  • 1/2 cup Parmesan cheese, freshly grated
  • Kosher salt and freshly ground black pepper, to taste

Preparation

  • Preheat the oven to 400°F and lightly grease a 9×13-inch baking dish with butter or nonstick spray. Set aside.

  • In a large skillet over medium-high heat, add 2 tablespoons of butter and 2 tablespoons of olive oil. Once the oil is shimmering, add the onions and spread them out evenly across the pan. Let them cook, stirring occasionally, until they become soft.
