Fried Potatoes, Onions, and Smoked Polish Sausage

Ingredients

  • 1½ pounds of russet potatoes, diced into 1/2″ cubes
  • 1 pound of sliced smoked sausage
  • 2 tablespoons of olive oil
  • ½ teaspoon of seasoned salt
  • ½ teaspoon of Italian seasoning
  • ½ large red bell pepper
  • ½ large green bell pepper
  • 1 small diced onion
  • Black pepper to taste
  • Shredded parmesan cheese for garnish

Instructions

Prepare the Ingredients

First, dice the potatoes and slice the sausage. Next, dice the onion and bell peppers.

Cook the Onions

In a large pan, sauté the onion in 1 tablespoon of butter over medium heat until it becomes translucent and soft. Remove the onion from the pan and set it aside.

Cook the Potatoes

In a large skillet, heat 1 tablespoon of butter and 1 tablespoon of olive oil until the butter melts. Add the diced potatoes, seasoned salt, Italian seasoning, and black pepper. Cover and cook, stirring occasionally, for 15 minutes or until the potatoes are somewhat softened.

Add Sausage and Peppers

Then, add the sliced sausage and cook for another 10 minutes. Add the onions and bell peppers to the skillet and sauté until the peppers are tender-crisp.

Garnish and Serve

Finally, if desired, sprinkle shredded parmesan cheese over the top before serving.

Cooking Note

For a crisper sausage, cook the sausage separately in a pan over medium-high heat until crisp while the potatoes are cooking.
